Easy Homemade Salsa

So, in the Fisher Family salsa is like water. My hubby has a short list of things he has to have in the kitchen at all times. Salsa is numero uno followed by tortilla chips, Kraft mac and cheese, Costco kosher hot dogs, Coke Zero, eggs and cheese (diet of a champion, hehehe). Any way this is the super easy, did I mention tasty salsa, that keeps my hubby happy. It can't be any easier then this folks you just throw all ingredients into a blender and blend, that's it.

Easy Homemade Salsa
2 cans stewed tomatoes
2 cans green chilies
1 medium onion
1 Jalapeno (no seeds)
2-4 limes juiced
1 tablespoon pickled jalapenos
1 tablespoon chopped garlic
salt & pepper to taste

Put all ingredients into a blender and blend. If you would like more heat leave some Jalapeno seeds. Also, you can add some cilantro, but my hubby doesn't like it.

Since, I have to make this every week, I can make this salsa in my sleep. I hope you like and get to give it a try.

Fiesta Lime Chicken

So, this is my take on Tequila Lime Chicken because here in Utah you can't buy Tequila at the grocery store. So I decided to try it with out Tequila and what I got was YUMMY. This is a great marinade for those summer time BBQs.

Fiesta Lime Chicken
1 Jalapeno
3 limes
5 garlic cloves, peeled
1 teaspoon kosher salt
1/2 cup chopped cilantro
5 tablespoon olive oil
6 boneless, skinless chicken breasts

Cut Jalapeno and remove seeds (or leave some or all for some heat) Squeeze the lime juice into a food processor or blender. Add garlic cloves, jalapeno, kosher salt, cilantro and olive oil and blend.

I love to cut the chicken in half, it grills up nice and even and hey you double how much chicken you have.

Then put chicken and marinade in Ziploc bag and put into fridge to become limey goodness.

When I grill these beauties I like to spoon some of the marinade on to the chicken to get extra tasty goodness.

Hope you get to try it out at your next BBQ. Here in my house it seems we make this every week. This chicken is great served with some corn on the cob or cut up and add to make tasty chicken quesadillas or tacos. My kids and husband can't get enough of it.

White Chocolate Popcorn

Here is another one of my favorite and easy peasy treats to make. It is another one of my most requested to make, because it taste like heaven. Now, I'm not a white chocolate fan, but I love this popcorn, it is a perfect salty & sweet snack.

Ingredients

Microwavable popcorn
White chocolate (I like to use the Wilson candy melts)

Yep, that is it folks 2 ingredients already easy. I like to use 2 bags of popcorn with 1 bag of candy melts.

Step 1.  Pop the popcorn per popcorn directions. Empty into large bowl and be sure to keep an eye out for unpopped kernels and remove them. You don't want to cover them with white chocolate and later bite into them, not fun.

Step 2. Melt chocolate. I melt mine in the microwave by putting chocolate into glass microwavable safe measuring cup. I then put into microwave at 15 second intervals taking it out each time and giving it a good mix till it is completed melted.

Note: You always want to give it a good mix because sometimes it does't look like it is melted until you mix it, as in the picture above. Trust me I learned  the hard way when I first over cooked my chocolate, there is no saving it once you over do it.

Look how yummy and smooth it is, refrain from licking the spoon, that comes when you are done.

Step 3. Pour chocolate onto popcorn.

Step 4. Give it a good mix.

Step 5. Lay out popcorn on aluminum foil or wax paper to dry. When dry break apart into to serving dish and enjoy.

Be warned this stuff is like crack. I had to hold off my kids so I could get a picture of it.

Mint Oreo Brownies

Yummy green dessert for St. Patty's Day, but no matter when you make these they will be a hit. I always get rave reviews for these and after making them once. I get requests to make these over and over. My husband's Job always requests these, I'm starting to think they are making up potlucks to get these.

Let's get baking...

What you need:
Your Favorite Brownie Mix
Oreo Cookies

First. Mix Brownie mix according to box.

Second. Drop in Oreo cookies (I do about 3 at a time). Then coat Oreo with the brownie mix and pull out and drop in greased cupcake pan.

It may not seem like you have enough brownie mix but your good.

Third. Bake at 350 for 15 min. Take out of oven and allow to cool. I then use a knife to scrape along the rim for easy removal of Oreo brownies. Makes 2 dozen brownies.

I love to watch the surprise on peoples faces as they take a bite out of the brownie and find the wonderful Oreo surprise in the middle. Hope you enjoy this recipe. Let me know how you like them.

Crockpot Apple Pie

Today, I made my favorite crock-pot recipe, Crock-pot Apple Pie.

I love this dessert recipe because I get to use my food storage and crock-pot to produce yumminess.

You'll need:

5 cups de-hydrated apple
5 cups water
6 tablespoons sugar

For Strudel
2 cups regular rolled oats
2 cups packed brown sugar
1 cup flour
1 teaspoon cinnamon
1 cup butter

Mix apples, water and sugar in crock-pot.

Mix all the strudel ingredients in a bowl.

Stir 1 cup into the apples.

Sprinkle the rest of the strudel on top of the apples.

Put on high for about 2 hours, till most of the water is gone. Take lid off for 15 minutes.

I love to top mine with ice cream and enjoy.
